I have 10+ years of experience cooking various types of food and catering to the masses at several diverse venues all over Austin. My strength is in baking, but I'm great at cooking all types of cuisine.
I grew up in Orange, Texas which is on the border of Texas and Louisiana, so I like to think much of my cooking mixes Southern, Cajun and Tex-Mex cultural flavors. I'm also a huge fan of Asian dishes, especially Chinese. And I love making things spicy! But I can hold back if you wish.
Not only do I have experience doing these things, but I also teach kids ages 7-16 how to bake and cook while being safe and clean in a kitchen. I've worked many different sides of catering with a local company. I've also done several events on my own. I've catered short film sets, non-profit cocktail hours and weddings. I'm a Chef for hire and can be utilized many ways in the culinary area.
When I cater, I make everything myself from scratch while trying to by good quality and local ingredients. I'm also understanding and knowledgeable about vegetarians, being gluten free and having other dietary restrictions. I can offer up menu ideas and we can work together, or I can take on most custom menu items if you have things in mind.
I do not mind doing corporate catering where I arrive at a location to set up and clean up food that has been delivered from another source.

Pricing: Most of my pricing will be based on headcount and/or hours it would take. If you request a flat rate, then I will use my best judgement on everything including: labor hours, travel, gas, food cost, rentals, and any other fees that may come up. I won't do anything less than $10 a person or $25 an hour.
In some cases I may require a 4 hour minimum and/or a 25% deposit while paying the remaining balance the day of the event, or up to 3 days after. I do offer family and friend discounts, as well as, work off the barter system.
I'm also really good at working with a budget, so, if you need me and you have a set amount to use, I will gladly make it work if I can, but if your budget comes out to be less than $10 a head, then you will have a very limited menu.

Battered and fried green tomato slices topped with Micro Greens and Bacon, then drizzled with a creamy garlic cilantro sauce.
Shredded brisket or pork with BBQ Sauce and crispy shallots or mixed greens on a mini burger bun.
Ground beef or turkey patty with, or without, sliced colby jack or pepper jack cheese and romaine leaf on a mini burger bun.
House made tostata chip with refried beans, pulled pork and fruit pico.

Baked Fingerling Potatoes
Fingerling potatoes baked with shredded cheddar cheese and bacon bits topped with sour cream.

Freshly made salsa and seasoned chips. It can be spicy!

Fresh Hummus topped with a tomato fondue served with toasted pita. Ask about the various types of hummus.

Spinach Artichoke Dip
Sauteed and chopped spinach mixed with artichokes and melted seasoned cream cheese. Served with bread toasts and fresh french bread slices.
Baked Apple Brie
A Brie cheese wheel with a cinnamon apple spread center, wrapped with buttery puff pastry, topped with the apple filling and sprinkled with cinnamon and sugar. Garnished with grapes and berries and served with bread and crackers.
A basket of homemade chips served with sides of queso, ground meat, fresh salsa, chopped romaine, sour cream, guacamole and jalapenos (fresh or pickled). Make it how you like it! You can also add scored avocado halves to make avocado bowls at extra cost.
Pecan Crusted Chicken
Pounded chicken breast marinated in seasoned buttermilk and breaded in a toasted pecan and bread crumb mixture, then baked to perfection. Can be served with a sauce or fruit chutney.
Green Chili Cheese Stuffed Chicken
Chicken breast marinated in a cilantro chili mixture, seared, and stuffed with a green chili and cheese mix, then baked to perfection. Can be served with a sauce or salsa.
Chorizo and Cornbread Stuffed Chicken
Greasy chorizo mixed with gluten free cornbread served with a roasted poblano cream sauce. Can be served as stuffed pepper.
Bread Stuffed Pork
Pork tenderloin marinated in a wonder mix, seared, and stuffed with a bread and fruit stuffing.
Cornbread and Greens Stuffed Pork
Braised collard or mustard greens mixed with gluten free cornbread stuffed in pork tenderloin and served with red eye gravy. Can be stuffed mushroom.
Hearty Cheesy Lasagna
Lasagna with lots of seasoned beef, marinara sauce and loads of cheese. You can get spinach lasagna as a vegetarian option.
Thick biscuit filled with your choice of shredded chicken, pork, or beef topped with your choice of gravy or sauce. Ask about types of biscuits.
Fresh pizzas with toppings of your choice: Pepperoni, Alfredo, Fiery Hawaiian, Margarita and much more. Also try the odd, but wonderful, Fig pizza.
Tacos of your choice stuffed to macho size. Tacos can be breakfast, brisket, chicken, turkey, pork or bean; and have corn or flour tortillas.
Sandwiches stuffed Texas size.
Chicken or Eggplant Parmesan
Breaded and seared served with marinara on a bed of noodles and topped with Italian cheeses.
Breaded or naked nuggets tossed with a sauce. Sauces: Orange, General Tso's, Honey, Sesame, Teriyaki

I try to make as much as possible from scratch and use organic and local when able and necessary. I do my best to recycle and compost. I make things vegetarian, vegan or gluten free for those who require or request. I can also mix and match items, or make a custom menu with you, if you'd like. I want to make it "As you like it". Also ask or tell me about spice levels. I like to make things hot and I can get carried away if you let me.
